Lady Robinson…
There is a beach that runs the length of the Grand Parade, and is the focal point of Brighton-Le-Sands. In honour of the wife of Governor Hercules Robinson, of Hong Kong fame, it was named “Lady Robinson’s Beach”. Now Lady Robinson was summed up as ‘fond of gaiety and society, and … majestic-looking’.

Ooh la la…
It’s a term that the French invented, “ooh la la”, it is a sense of surprise with a cheeky undertone. Yes girly, but also very cliché! It is much like our take on the French Martini.

The Apple Hemmingway daiquiri…
Yes we went there, DAIQUIRI, and we know that it conjures up images of SLUSHY and SLURPY machines, oozing out pink, or purple or fluro green ice sludge - just like Frostie’s in Newcastle (Sorry guys)!

Botany breeze:
The sea breeze is a bit different on the shores of Lady Robertson’s beach. You can smell Avgas from the airport, crude oil from the tanker sitting off Kurnell, and the unmistakable smell of Yeeros from the shop on the corner. So when the “Sea breeze” cocktail surfaced its head behind the bar at Bar Brighton, we took the little bugger by the neck and changed him a bit!
Andrew & Amy’s Engagement Party
We welcomed Amy & Andrew on 8 March 2009 for their engagement cocktail party here at Bar Brighton. Brighton-le-Sands put on some marvellous weather for the afternoon. Guests were treated to gourmet dips and a bevy of canapes plus a wide selection of wines, local and international beers and more!
