The Apple Hemmingway daiquiri…
Yes we went there, DAIQUIRI, and we know that it conjures up images of SLUSHY and SLURPY machines, oozing out pink, or purple or fluro green ice sludge - just like Frostie’s in Newcastle (Sorry guys)!
NO NOTHING LIKE THAT! Think of Hemmingway, that revered author, writer and journalist. So cool and important was he, that today there is a Cocktail still made to his specifications! A real daiquiri has 3 ingredients, White rum, fresh lemon or lime juice and sugar - notice there is no Fruit, fruit syrup, food colouring, and definitely NOT a blender in sight. So what happened to this refined classic that beckons a proverbial “eeeeeeew” from cocktail drinkers worldwide? Well our research points to 3 things - Neon lights, the 80’s and Tom Cruise.
We are bringing back the classic here at Bar Brighton, but of course with our own distinct twist. We use white rum, but we prefer to shake it over ice with PAMA pomegranate liqueur. Unlike the sweeter maraschino cherry liqueur, it balances well with the citrus flavours. Pomegranates tend to be a little bit tarter, so we add some genuine maraschino cherry juice and a pinch of brown sugar. Due to the complexity and natural acidity of the pomegranate liqueur, we have reverted to straight lemon juice, and we balance the palate with a splash of cloudy apple. If Hemmingway was drinking it here, he would say “Always do sober, what you said you would do drunk!”
